Strawberry Cake

I love surprising guests with something that tastes great, yet is made without grains and white sugar. Recently, I had another chance to pull off a fun culinary confection when it was my daughter’s 10th birthday. I let her have her choice of cakes to celebrate, and she chose a strawberry cake with strawberry frosting. So with a little inspiration, I developed this Grain Free GAPS Strawberry Cake.

This recipe is for one 9 inch round cake. The recipe can either be doubled, for a two-layer taller cake, or carefully serrated in half for two layers of cake from one pan. When cooled completely, frost with a double batch of my Strawberry Buttercream Frosting (GAPS friendly, refined sugar free)

Grain Free & GAPS Strawberry Cake

Ingredients

Scale
  • 1 cup fresh strawberries, diced
  • 5 tablespoons chilled butter, grated
  • 1 cup coconut flour
  • 8 eggs
  • 1/2 cup raw honey
  • 1/2 teaspoon sea salt
  • 1 teaspoon baking soda
  • 1/2 cup homemade whole-milk yogurt (24 hour culture for GAPS)
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat oven to 350F. Line a 9 inch cake pan with parchment paper and coat the sides with butter or coconut oil.
  2. Put the honey and eggs in the bowl of a standing mixer. Using the whisk attachment, mix on medium-high (setting 6 on my Kitchen-aid mixer) for 5+ minutes, until pale yellow and frothy.
  3. Add the grated butter and mix for another minute.
  4. In a separate bowl, mix the coconut flour, salt, & baking soda together, then add to the honey & eggs mixture. Mix for about 1 minute.
  5. Gently mix in diced strawberries, yogurt and vanilla extract.
  6. Pour the batter into the prepared cake pan. Bake for 35 minutes or until a toothpick comes out clean. Cool completely before frosting with Strawberry Buttercream Frosting.

  1. I want to make a cake for my daughter’s birthday, and this looks great! Do you think creme fraiche would work instead of yogurt?

    1. Hi Debby!
      Yes I think it would work. The only possible issue would be that the cake may be a bit drier, since generally unstrained yogurt has a bit more whey. The batter is thick for this recipe, but if it looks a bit dry you may need to add a bit of whey or water. A little bit of moisture goes a long way with coconut flour! I would not add more than 1-2 Tbs.

    1. Hi Ruth,
      Yes it could work for any birthday cake, as long as the child in question tolerates the ingredients! And yes, you can substitute maple syrup or date syrup, though I’ve never tried it. Some considerations would be:
      1) Neither one is GAPS approved so if on GAPS honey should be used.
      2) Maple syrup is a bit more watery than honey so the consistency of the cake may be affected slightly.
      3) Both maple syrup and date syrup generally have about 12 grams of sugar per Tbs vs honey which has 17 grams. So you may desire a less sweet cake, or you may have to add more to get the same sweetness.

    1. Hi Eileen,
      Yes! I have used kefir successfully. Sour cream will be a bit thicker so you may want to dilute with kefir or whey to get the same consistency as yogurt.
