Cauliflower mashed potatoes is a simple side dish that was one of our favorites while our family was on the GAPS Introduction Diet.
I’ll make this post brief, because the recipe speaks for itself. So warm, so comforting, so yum.
- 1 Large head cauliflower
- 1 Qt. homemade stock
- 1 Teaspoon sea salt
- ¼ Cup traditional fat of choice: butter, ghee, coconut oil, tallow, etc.
- Boil cauliflower in stock until tender
- Pour off extra broth
- Add salt and fat of choice, then blend with immersion blender until smooth
