Russian custard
This Russian custard recipe is SO simple, it hardly merits being called a recipe.
However, it is a delicious addition to the GAPS Diet protocol, an easy-to-make dessert, and a wonderful way to get more (healing and nutrient-dense) raw egg yolks into yourself or your family members. It also makes a great topping for my GAPS Intro pancakes!
It is also (technically) a GAPS Introduction Diet legal dessert. Yes, I said that right.
Please use sparingly and judiciously on the Introduction Diet as this GAPS Diet and Protocol period is meant to be a period of deep nutrition and healing.
Small amounts of honey are allowed on the Introduction Diet for tea. So instead of putting honey in your tea, you can use it for Russian custard on Stage 2 and beyond. It only takes a teaspoon of honey.

Description
A simple and nutrient dense GAPS dessert
Ingredients
- PER PERSON
- 2 egg yolks (raw)
- 1 tsp honey (raw)
Instructions
- Put egg yolk and honey into the bowl of a stand mixer (or use a hand held mixer) and whip on high for 2 to 2 and a half minutes.
- Pour into ramekins and enjoy right away or freeze for a frozen custard version.
